Summer is almost over, and if you are like me, then you know it is a bittersweet farewell between dreading shorter days yet looking forward to the changing colours of autumn and a slower pace. The last of the summer fruit has arrived and won't be here much longer. I have such a desire to indulge in all of summer's splendid bounty because I know that the produce will not taste this fresh until summer comes around again.
I should probably preface this recipe by divulging that I am secretly a picky eater! Unlike the majority of children, I'm sure, I loved my vegetables (and I still do), but fruit was not for me. Luckily for me, this was always easy to hide from others, as I just ate my main meals and refrained from fruity desserts. Since my childhood days, I have grow to tolerate and even enjoy fruit, but, only fresh, local, seasonal fruit. I'm sure most people would translate that as me still being a picky eater, but I prefer to think of it as eating seasonally, and truly appreciating the flavour of fresh fruit. It means that I will have to wait a whole year before tasting the local stone fruit again, but I have always believed that good things are worth the wait.
These peach overnight oats are perfect for the end of summer. The soaked oats are refreshing and cool, and I left the peaches intact. I always feel it is such a shame to cook or blend fresh fruit when it is in season. I just want to enjoy it in it's purest form. So here is a simple recipe that lets the summer flavours of the peaches come through. It's wonderful to enjoy all through peach season and into September, if you are feeling nostalgic about the waning summer light and bright days.
Peach Overnight Oats
Makes one serving
1 cup almond milk (or other milk of choice)
small knob (1/2 inch piece) of fresh ginger, finely grated
2/3 cup of rolled oats
1 tsp. lemon or lime juice
1-2 tbsp. chia seeds (to taste)
1 tsp. vanilla extract
1-2 ripe peaches, sliced into thin segments
1 tsp. ground cinnamon
1 tsp. ground ginger
1 tsp. maple syrup
The Night Before
Make the over-night oats: In a medium sized bowl, combine the oats with the milk, lemon juice, and grated ginger. Stir to incorporate all ingredients. Let the mixture sit overnight in the fridge in order to soften the oats.
In The Morning
Add the chia seeds and a drizzle of vanilla extract to the oat mixture. Stir ingredients together and set aside for 5-10 minutes out of the fridge. The chia seeds will absorb the liquid from the mixture and create a thicker porridge. Use more or less chia seeds depending on your desired consistency. Meanwhile, prepare the peaches: In a small bowl, combine the sliced peaches with the cinnamon and ginger powder, and a drizzle of maple syrup. Mix to combine and let juices marinate for a few minutes.
Put oats in a bowl and serve with peaches on the side. Add extra milk if desired.
